One can't forget that Dean is a hunter and was raised that way. He was raised in a military upbringing which Sam escaped but Dean stayed with. He was exposed to it longer and being a hunter means you can't try and escape these things. You have to remember that hunters kill and I haven't seen one in the series yet who didn't enjoy it slightly. Also remember that Dean couldn't be too evil or God wouldn't have ordered his revival. Nor would they warn him of SAM being too dark. I think he just had a lot of stored anger and frustration at being tortured for those thirty years and took it out on the others he was taken to. Now that he's back on top, he's horrified at what he did. I think it was one of those things where it made sense at the time but afterwards doesn't understand it.
